PORK BUTT

Not to shabby again. Made a 9 lb pork butt. Used a KOSMOS Dirty Bird rub. Seasoned it overnight. Pit it in at 7am at 250 degrees. Wrapped it at Noon and turned it up to 275 degrees. It just hit 205 internal temp. Letting it rest for an hour. Stay tuned for the taste test

Wow what a great taste. Savory, not to salty. Works perfect with the pork. The smoke tube added the smoke flavor but not over powering. In the rub I could taste a bit of pepper, chili powder taste that was pretty good. I think this is my best work yet. Pulled pork sandwiches tonight. I may add a slight dab of BBQ sauce. But it doesn’t need it. The bark was really good and full of smokiness flavor with a bit of tang. Bon appetit

looks great makes me want to get my going now. I have my Pork Butt ready to go on Saturday in the Yoder.
 

Heck yea did a 13lber on Monday night I believe it was myself! A little ticked though bought from Costco when I opened it up whoever deboned it cut it in half and did a horrible job butchering so I basically cooked it as 2 separate butts. Btw if you got a stand mixer they work great at pulled pork using just the normal paddle attachment ?
