Newbie here and I see people talking about P1 P2 P3 settings. What exactly does that mean?

Those are "P" settings on the old controllers. If you have a newer model it does not have those. Basically it is a "pause" setting which pauses the auger. On the smoke setting it is defaulted to setting 4. If you want more smoke you can increase it all the way up to 7. For more heat on the smoke setting reduce it to 1, 2 or 3. With that said I normally just leave mine on 4. If I go up to 6 it flames out every time because the pause is too long. Since I leave it on 4 all the time I just say I don't use it.
