Greetings Brain Trust,
My PB 850 is a couple years old and one thing I have always noticed i that the heat closest to the fire pot is always hotter. I have never done a temp check but food closest to the fire pot cooks faster. The baffle plate (heat diffuser?) has a downward slope towards the smoke stack/grease bucket end. Knowing heat rises I am wondering if the slope of the plate is getting hotter at the fire pot end because of the slope for grease drainage? Has anyone noticed this issue when smoking and the grills are covered with several smaller items, (Chicken Breast's)? Has anyone done any mods for this?
