Anyone made Pastrami with their smoker? The link is to youtube and the guy's a little off the rails but the recipe looks great!

Hi Stilly,
I have and still do make corned beef for St. Patrick's Day. My corned beef recipe is Alton Brown inspired, it's a 10 day process done in my kitchen, not my smoker.
Pastrami in the video looks fabulous.
I was looking around reading about the differences of Pastrami and Corned Beef.
I found this Oklahoma Joe's Recipe that I would like to try.

When I go after smoking or cooking something new and different I like to read up on recipes from other Chefs and even study history of a some recipes, like Bouillabaisse.

I make a variation. I use a corned beef, soak over night to get rid of the salt, trim access fat, heavily pepper it then smoke for 4 hrs, wrap and cook until internal is approx 205 f
