Did the 2 -2 -1 baby back ribs cook today in my PB 1100 PS 2 with heat deflector and shorty four window flame tamer.
2 hours of smoke at 230 F temp probe stayed rock solid at same temperature. , 2 hours with ribs in a sealed foil pan at 230 F with 1/4" of apple juice but then temperature rose to 250 / 260 F. I had to turn the temp down to 210 F to get it to drop to 240 F . Then remove foil pan for an hour at 250 F, rock solid again stayed at that temp the whole time.
Does the foil pan and juice absorb that much heat that the unit over compensates and feeds too many pellets and over does it ?
