Was on the phone with Customer service for about an hour as my internal temps we’re not the same as on the control panel. After checking all the boxes as what could be wrong we found out that by removing the aluminum drip tray was the issue. With the drip tray in I had to set my temperature to 350 for my internal temp to get to 250.

So how do you do anything but direct heat grilling? I have the same issue and they sent me a new temp probe.

I went to replace my temp probe. crawled under it to take the shield off the bottom of the control panel and looked up in there and could clearly see the probe was not connected. Took the shield off and connected it up nice and tight, pulled on it to make sure the connectors held and I think I'm good to go. Why I did not get an error code I have no idea.

I have the Laredo 1000 and I had the same issue and they sent me a new probe and it is better but still does not match the actual temp all the time.
What Smoker do you have, and I'm trying to figure out how to eliminate the drip tray without scorching the meat. How do you do that?

Sounds like the OP has a vertical smoker - given the drip tray was in the way. Im not aware of horizontal smoker/grills that have aluminium trays. My PB820SP SHIELD is steel - including the sear plate - and I certainly would not remove it to fully expose the burn pot.

Like I just responded to roadkill a, the OP must have a vertical. And, I'm guessing it's an electrical one. A propane or pellet version with a burn pot would has grease fires a plenty without a cover over the flames/pot.
