Hi everyone, just got a Pro 820 from Lowes and it works great!

1 quest, when I read recipes and it states a temp to cook at for set time what temp should I use. Meaning recipe says 250 for 3 hrs. Is that the main controller temp? The box is about 30 deg cooler then the gauge is this factored in, meaning to have 250 in the box I should set controller to 275? Or just set the temp on the dial to match the recipe
. Bear with me I'm new..lol
 
I use actual temp at the food level with a separate thermometer. Mine also runs 20 to 30 degrees cooler then what the unit says.

Thank you. That's what I thought just wanted validation.. my unit held temp great and I live in mn, it was 18 deg my first cook.
