Not directly related to smoking but the recent post about how long can you keep a brisket after smoking brought something to mind
I am now an old timer, but in my youth I knew a real old timer who hunted his game for food.
He’d let his game hang in the garage for a long long time after bringing it home.
Pheasants hung unplucked for a week or two.
Deer, skinned would hang until it got a nice blacked appearance. Then the fellow would slice off the dark stuff and reveal a nice, well seasoned pink inner venison.
The guy lived into his 80s so there you go.
