Did spare ribs yesterday. Turned out great! Used the 3-2-1 method and sauced them during the last hour. Before I had only done baby back ribs, had never done spare ribs before. I think I like spare ribs better. They had an awesome smoke taste. Used competition pellets mixed with charcoal pellets.
