Left over brisket chili

Decided to make smoked chili with my left over brisket. If it turns out well I will post the recipe.

It's not done smoking yet but just had a couple bites and it's really good. Going to let it smoke for a few more hours and then in to the fridge as it is for lunch tomorrow. So here is the recipe

2 lbs left over brisket
3/4 lb bacon
1 lb sweet Italian sausage
1 medium onion
1 green pepper
1red pepper
2 cans of Rotel
1 small can of chopped green chili's
2 Tablespoons minced garlic
3 Tablespoons chili powder
2 Tablespoons ground cumin
1 Tablespoon smoked paprika
1 Tablespoon oregano
2 teaspoons black pepper
2 bay leaves
1 28 oz can crushed tomatoes
3 Tablespoons tomato paste
1 heaping tablespoon of better than bouillon beef
2 cups brewed coffee
1 cup water
1 can red kidney beans

Toppings

Cheddar cheese
Jalapeno
Green onion
Sour cream

1-Fry bacon and sausage in separate pans
2-Chop onions and peppers
3-Remove bacon and sausage from grease and reserve a quarter cup of bacon grease to saute onions and peppers.
4- saute onions and peppers
5-add garlic
6-add all dry spice ingredients
7-add coffee and water
8- add better than bouillon
9-add can of tomatoes,tomatoe paste, Rotel and chili's and beans
10- add all meats
11- mix thoroughly
12- set smoker to 225 (with smoke tube)and smoke for 4 hours stirring every half hour
13- enjoy!
