Interrupted cooking

I was smoking a pork butt on my Pit Boss 1100 and had to suspend smoking due to a family medical emergency. The meat had reached an internal temp of only 195 degrees F. Since I never was able to complete the process is there any way to salvage the pulled pork I was attempting to produce?

At 195 it is safe to eat just maybe not as tender as it could be, if it were mine I would toss it in the instant pot with a half can of coke, high pressure, 8-10 minutes and it will be right as rain!

Sorry I didn't answer sooner but I couldn't find your response again in the forum. You literally saved my butt!!!! After the instant pot, the meat was tender and delicious. Thanks a bunch.
