Shutdown: push/hold the power button until display turns off, let it continue to run until it completelyshuts off. Lid can be open or closed

Cleanout: after every cook, I raise the temp to 450°F to do a burnout (lid closed) until smoking stops, then do the shutdown/cool down. After three or four cooks, at some later time, I vacuum the ash and char out.
 
My 700 doesnt get used as often as i like so after each cook i crank the temp to high. Drain the pellets and let it run until it runs the auger clean then shut it off and let it go through shut down. Next day it gets scraped and vaccumed. The burn pot gets a small handful of pellets as a prime for next time....

It is alot of fuss, but my smoker could sit for a month or more between use so i just try to avoid issues....
 
I do a hybrid of ol smokey and sparky. Finish cooking run up the temp while the meat is resting the go through the shutdown. Next day clean the grates remove the heat deflector and vacuum everything out and rub on the temp sensor. PB850 II pro from lowes 2 1/2 years. App is crap lol. get a wireless thermometer.
