I’ve had my Pitboss Pro v4 for about 2 years now. Every time I go to cook a new cut of meat i look for a new recipe and smoking tips. The smoking community is inspirational and giving. Tried my first Pork Butt about 6 months ago and all the advice I read online left me with a 9lb piece of shoe leather.
I live at 5,200 feet. Water boils at around 202°f at this altitude. So, for you flat landers when you get a stall at 160°f I get a stall at 150°f. When you want a finish temp of 203°f I need to shoot for a finish temp of 193°f.
Now that I’ve figured this out my smoke sessions have become much more reliable and enjoyable.
If you live at higher elevations look up what the boiling point of water is at your elevation and adjust your end cooking temp accordingly.
