Flame broiler plate open or shut?

I’m learning with my Pit Boss Sportsman, and am having trouble knowing when to open the flame plate and when to leave it shut. When doing smaller things like burgers, chicken thighs etc I’ve been leaving it open the whole time. It makes for a major hot spot of course, and makes it very difficult when grilling large amounts.

Also I have 3 grates to use and have been having trouble figuring out if it’s best to use the bottom main grate or middle one for smaller things. Any ideas or help is much appreciated!!! I’m totally new to pellet grilling and look forward to learning on here.

P.S. I’m a guy, no I haven’t read the manual. Maybe it would give me ideas. Just looking for real life info. Thanks.
 
Thanks for your help, I grilled chicken and steak last night with it shut and it turned out the best yet of anything I’ve grilled.
