We decided tri tip would be great for Father's day. I have been slow smoking at 180F until internal hits 120F then finishing with a hot reverse sear on the gasser.
The challenge was, it was hot out. High of 103 and the smoker was in the sun before I started so it was pretty warm.
On the lowest P7 smoke setting temps were 230 to 260.
I tried a few ways to prop open the lid. Eventually a the flavorizer bars from my Silver B worked.
I should add, I smoked it on the upper rack with a griddle on the lower rack to block the heat.
