Doing a sloped brisket

Did a couple briskets over Christmas and overall pretty good. But the larger one was thicker on one end. I gauged doneness by the thick end and thus probably overcooked the thinner end a bit. So in hindsight maybe lop off the thin end earlier and let it rest while the thicker part finishes? Whatdya rhink?

Cut it off or cook it separately. Place I get mine I can buy the point or the flat or the whole brisket when it is on sale.

Man Mike I'm so jelly!
Steve I trim that save it up and grind it into burgers. Brisket burgers are so good if I could buy it cheap enough I'd buy it just to grind.
