Choice brisket!

How long do you think too smoke a 3 pound brisket
Two 4 lbs. briskets took 14.5 hours. Nature of the beast, meat is tough as the sole of a work boot, after it reaches 205 deg it's nice and tender. Just takes time, low and slow 225 deg. wrapped at 165 deg

So are you saying it would take 14.5 hours to cook my work boots? Might try it sometime with an old pair I no longer wear. Why not? The last brisket I did tasted like an old leather boot. :ROFLMAO:
