Today I picked up some pork lion at Kroger for $1.49/lb. Eggs Bennie are on our Sunday breakfasts quite often and Christmas is around the corner.

I have some authentic Maple Syrup and local apple cider for the brine. And Bear Creek apple pellets due to arrive today.

Cure time is 10 days! Smoking at 200F until the stall then crank up the heat to 325 and finish the cook looking for internal temp is 145F.

This should make some nice Christmas gifts for family.
