Burn off after cook

So my manual for my pb850ps2 says at then end of the cook just press power and let it do its thing.

I have read a few times that when done a cook specially if a fatty one to crank it to high once it gets there let it burn off for 5 minutes and then shut down.

Who does what?

I've been cranking it up to high, letting it go 400 plus for about 10 minutes then shutting down
