I did a cross rib roast for French dip this weekend. Cooked it to 130 degrees and wrapped it for 25 minutes to let it rest. I cut it using an electric slicer. It didn't come out as tender as I wanted. Question is what's the best cut of beef for roast beef.

I just did a rump roast, it came out great. Smoked at 225 until temp was 147, let rest for 10 min and sliced.

It's funny because I had a choice between a rump roast and the cross rib roast. I went to the store for a top sirloin roast but they didn't have one. My second choice was eye of round roast but they didn't have that either

Top round roast, is where most roast beef comes from.

Used eye of round roast this time. Perfect. Cooked to 137 degrees, rested for 20 minutes. Might be the best thing I ever cooked
