Steve, you got my interest. I love beets.

I’ll eat anything but ya lost me at beets lol
Oh, I completely understand! Beets can be quite polarizing, and not everyone shares the same taste preferences. It's perfectly alright to have food preferences and avoid certain ingredients like beets. After all, variety is the spice of life, and there are plenty of other delicious options out there to satisfy your appetite!

Did the beets. Before I could get a pic my wife peeled and cut them up for a salad.
They tasted like……beets.
After peeling the smoke was mostly gone so I really ended up with roasted beets. Conveniently done at the same time as the spatchcock chicken

Here’s the chicken I did yesterday along with the beets. In fact all at the same time I had the chicken, the beets and a batch of nuts all smoking together.
For the chicken it was about a 2 hour smoke at about 130-140, explains the darkness, then about 1.5 hours at 350.
On the graph you’ll see the warm up, the smoke time, the roast time and then a burn off at the end.
Meat was very tender, white eat moist and juicy.
I had some connection issues with the app but it all worked out.

yes, smoked beets are turning out to be progressively well known among food lovers and gourmet specialists. Smoking beets grants a special and tasty flavor to the vegetable, adding profundity and intricacy to their normal pleasantness. Smoked beets can be utilized in different dishes, like plates of mixed greens, wraps, or even delighted in all alone as a tasty side dish.

Thanks for the comments
My beet smoking venture yielded beets that didn’t have much smoke taste. Probably because after the smoke they had to be peeled in prep for the salad
