Great results, 200 for 4.5 hours then ran temp up to 450 for 5 minutes each side to sear. Pulled it at 130 degrees. I used Kosmos SPG and fresh thyme cooked with Bear mountain Hickory. Absolutely fantastic!!!

LOL....How big was it? Tell me more....
It was 6lbs. The only regret I had was that I was impatient and didn't rest it long enough as you can see in the photo, alot of the juices ran out. It was still fantastic though.
