    Yes. I vacuum sealed the cheeses that I smoked, and intentionally didnt touch them for 2 full weeks. (that was hard....) Opened up the Pepper jack that I smoked first. Really strong smoke flavor. Overpowered the cheese. letting it sit in the fridge in a regular baggie now for a while...

    It hit 50 degrees here the other night. I tossed a small handful of pellets in the firepot and then turned it on (sear plate was open). Set the temp to 350. Couple minutes when it caught on and got going, I closed the lid. 10 or 12 minutes later, internal temp was up to 350. Closed the sear...

    Pellet discusion.

    I've been using Pit Boss brand pellets. Hickory is great. Competition is pretty good. Cherry is amazing. Not a real fan of Apple. I can tell you that Competition blend is way to strong for cold smoking cheese. Going to try cherry next time (on a smaller batch of cheese).

    In Pit-Boss-ese....Ash=Flavor. hahaha. just kidding. As mentioned above....the Smoke Like a Boss mod will eliminate 75% of your ash issues. Keeping the sear plate closed will eliminate 20% more. But....there is always going to be some. I clean my grates after each cook. I clean the heat...

    Ok. I'm not trying to be nit-picky. That mod is conceptually great, but ended up being very sad for the overall performance of the grill. If all you ever want to do is sear and cook 'fast', then yeah....this is great. that 1/8th to 1/4 inch gap is going to put hotspots all over the middle...
