Well, to be fair, I was being facetious. I'd always heard that pellet smokers couldn't give you a good smoke ring, and I was pretty pleased with those ribs (which tasted awesome as well!).
I kept them on S (which got up to about 180) for an hour or so and then bumped it to 270 for another...
The app uses the grill calibration question to determine if it's an older controller (with 225 as one of the presets) or a newer controller with the 10 degree increments. Since you obviously can't dial in 225 degrees on a controller with 10 degree increments, how you answer let's the app know...
It determines which controller you have. The older controllers (without the 10 degree increments) had 225 degrees as one of the presets. On the newer controllers, you can't dial in 225. So, by asking if you can set your grill to 225 degrees, you're telling it if you have the older or newer...
Yeah...I held off a cook until yesterday hoping the new app would be available on Monday as originally scheduled. It was just a couple of pork butts, so I had a lot of wiggle room as far as temps are concerned, so I didn't even bother with it. It's not even on my phone any longer in case there...

Hi...the racks on my BPS4V2 are 13" x 20". I'll leave it to you to determine if your turkey will fit.
In a worst case scenario, you could always split the spatchcocked turkey in half and use two racks. Not ideal, but possible.
Correct...you'll still need a natural gas regulator to step the pressure down, but since propane burns hotter than natural gas, the existing orifice will have too small an opening. So, either you'll need to find a replacement with a larger opening or drill it out yourself.
